the Noid'Or method

Every Noid'Or jar is the result of a complete artisan process: selection of raw ingredients, slow-roasting, sandstone stone mill grinding and vacuum sealing. No shortcuts. No additives.

Ingredient Selection

Everything begins with the choice of raw ingredients. Each ingredient is carefully selected for its quality, traceability and the conditions under which it was produced. We seek to know our sources, to understand the practices of those who grow or harvest, and to favour committed supply chains wherever possible.

Some ingredients come from producers we know personally: our spirulina is grown by la Ferme du Val Dagne, in the Aude — a French Nature & Progrès spirulina. The honey in our Halva comes from a Nature & Progrès beekeeper, also in the Aude, whose care for her hives we know well.

No anonymous ingredients, no palm oil, no soy lecithin, no artificial flavourings. What you read on the label is exactly what is in the jar.

Artisan Slow-Roasting

Slow-roasting is the step that unlocks the aromas. Our nuts — hazelnuts, almonds, sesame, cashews — are slow-roasted at a controlled low temperature to develop their full aromatic profile without burning or denaturing them.

This artisan slow-roasting, carried out by hand, is the opposite of high-temperature industrial processes. It takes more time, but it makes all the difference in the cup — and in the jar.

Stone Mill Grinding

This is the heart of the Noid'Or workshop. Our slow-roasted ingredients are ground in a sandstone stone mill, an ancestral technique that respects the raw materials. Unlike industrial blade grinders, the stone mill works slowly and at low temperature.

This gentle grinding preserves the natural oils of the nuts, their nutritional richness and their aromas. The result is a smooth, dense and deep texture — impossible to achieve with industrial processes.

It is also this grinding that gives our pure nut butters and artisan spreads their signature texture: neither too liquid nor too compact, with that particular grain that betrays the work of the stone.

Zero Additives, Zero Compromise

Our recipes contain no preservatives, no stabilisers, no emulsifiers, no palm oil, and no added sugar in the pure nut butters. In our artisan spreads, only the ingredients needed for the recipe are present — and nothing else.

The natural separation of oil at the surface is a sign of quality, not a defect: it proves the absence of emulsifiers. Simply stir before enjoying.

Vacuum Sealing

Once the product is made, each jar is vacuum sealed using a professional machine. This process removes oxygen from the container, which naturally slows the oxidation of oils and extends shelf life without resorting to any chemical preservative.

Vacuum sealing also ensures that the product reaches you intact, with all its flavour and nutritional qualities preserved since leaving the Massat workshop.

A Workshop Open to Sharing

The Noid'Or workshop does not only produce its own creations. For more than two years, it has welcomed other artisan producers who wish to process their raw ingredients in a professional, purpose-built environment.

Beyond making the equipment available, we support each producer in operating the machines — stone mills, slow-roaster — and in developing their recipes. This transfer of know-how is for us a concrete way of contributing to the development of quality artisan processing in Ariège and the Pyrenees.

The Noid'Or workshop is based in Massat, in the Ariège (09320), in the heart of the Pyrenees. This unspoilt territory, far from industrial zones, shapes our approach: slowness, attention, respect for raw materials.

Producing here is also a choice for short supply chains. Our products do not pass through a dozen intermediaries before reaching your kitchen. From the workshop to your table, the path is direct.
